Mini-Meatball Sliders

Makes 12 Servings:Mini-Meatball Sliders

Prep time: 10 min
Total time: 30 min

Ingredients:

  • 2 - Tablespoons vegetable oil
  • 1 - egg, slightly beaten
  • 2 - cups toasted rice cereal
  • 1/4 - teaspoon salt
  • 1/4 - teaspoon pepper
  • 1/4 - teaspoon onion powder
  • 1 - pound lean ground beef
  • 2 - sticks (1 oz. each) mozzarella string cheese, cut into 12 bite-sized pieces
  • 12 - small dinner rolls, split horizontally and toasted
  • Ketchup, mustard, lettuce, tomato slices, pickles and/or relish

Directions:

Preheat oven to 350 F. Line 15 x 10 x 1-inch baking pan with foil. Pour oil into pan. Tilt pan to coat bottom with oil. Set aside.

  1. In large bowl combine egg, cereal, salt, pepper and onion powder. Add ground beef; mix well. Divide into 12 equal portions. Shape into large meatballs.

  2. Place meatballs on prepared pan. Push one cheese piece into center of each meatball, reshaping meatball to completely enclose cheese. Roll meatball to cover all sides with oil.

  3. Bake at 350 F for 15 to 20 minutes or until meat is no longer pink.  Serve meatballs in rolls.  Top with ketchup (if desired).
