Horseradish Roast Beef Roll-Ups

1 - package (8-ounce) light
1 to 2 - Tablespoons prepared
1 - Tablespoon Dijon-style
4 - flour
32 - fresh
spinach leaves, stems removed
4 - slices (1-ounce) deli Italian roast
6 - slices (3/4-ounce) Deli Yellow or White
a small bowl, combine cream cheese, horseradish and
mustard. Beat at medium speed until smooth. Spread
about 1/4 cup cream cheese mixture evenly onto each
tortilla. Cut each cheese slice into 6 strips.
Arrange 8 spinach leaves over cream
cheese mixture. Place 1 slice roast beef over spinach;
sprinkle with about 1/4 cup cheese. Roll each tortilla
up tightly; wrap with plastic food wrap. Refrigerate
at least 4 hours or overnight.
serve, cut each tortilla into 1-inch slices. Discard
ends, if desired.
