Horseradish Roast Beef Roll-Ups

Makes 30 appetizersHorseradish Roast Beef Roll-Ups

Total Time: 4 hrs. 20 min.

Ingredients:

  • 1 - package (8-ounce) light cream cheese

  • 1 to 2 - Tablespoons prepared horseradish

  • 1 - Tablespoon Dijon-style mustard

  • 4 - flour tortillas (8-inch)

  • 32 - fresh spinach leaves, stems removed

  • 4 - slices (1-ounce) deli Italian roast beef or roast beef

  • 6 - slices (3/4-ounce) Deli Yellow or White American Cheese

Directions:

  1. In a small bowl, combine cream cheese, horseradish and mustard. Beat at medium speed until smooth. Spread about 1/4 cup cream cheese mixture evenly onto each tortilla. Cut each cheese slice into 6 strips.

  2. Arrange 8 spinach leaves over cream cheese mixture. Place 1 slice roast beef over spinach; sprinkle with about 1/4 cup cheese. Roll each tortilla up tightly; wrap with plastic food wrap. Refrigerate at least 4 hours or overnight.

  3. To serve, cut each tortilla into 1-inch slices. Discard ends, if desired.
