Black Bean and Salsa Salad
Ingredients
Directions

In a large
bowl, I blend the corn, black beans, celery,
onion, and cilantro.
I want them well mixed.

In a separate
mixing bowl, I mix the salsa and vinegar dressing.

I pour the
mixture over salad and toss well.

I cover with
plastic wrap, place in refrigerator and chill.
Picnicking &
Tailgating
I find this easy
to do, just before hitting the road.
I put the salsa dressing mixture in a glass jar
and place it in the ice chest.
The salad greens, I place in large plastic
storage bags, seal and into the ice chest.
When I am ready to eat, I just toss them
together and serve for our picnic or tailgate
function.
