Tablespoon Butter
- 1/3 cup
coarsely chopped pecans
- 1 package
(10-ounce) (6 cups) fancy mixed salad
greens
- 1 large (1
1/2 cups) mango, peeled, cut into 3/4-inch
chunks
- 1 medium
(1 cup) red bell pepper, cut into 1/8-inch
strips
- 2 ribs
(3/4 cup) celery, sliced 1/4-inch
Directions:
- In a small bowl,
mix vegetable oil, vinegar, and honey. Set
aside.
- In a 10-inch
skillet, melt butter until sizzling and add
pecans.
- Cook over medium
heat, stirring constantly, for 3 to 4 minutes
or until pecans are golden brown. Remove from
heat.
- In a large bowl,
place pecans, salad greens, mango, bell
pepper, and celery.
- Add dressing and
toss to coat well.
