German Potato Salad
Makes
6 servings
Ingredients:
- 2 - slice lean bacon, finely
chopped
- 1 - pound new potatoes,
quartered
- 2/3 - cup water
- 2 - Tablespoon green onions,
sliced
- 3 - Tablespoon light mayonnaise
- 2 - Tablespoon brown sugar
packed
- 1 - Tablespoon fresh grated
onion, with juice
- 1 - teaspoon spicy brown mustard
- 3 - Tablespoon cider vinegar
- lettuce leaves, garnish
Directions:
- In a skillet over medium heat,
cook bacon until crisp. Drain on paper-towel-lined plate and
set aside.
- In 2-quart saucepan, add
potatoes and water. Over high heat, bring to boil. Cover and
reduce heat to low.
- Simmer for 15 to 20 minutes or
until tender. Drain.
- In medium mixing bowl, put in
green onions, mayonnaise, brown sugar, onion, and brown
mustard.
- Mix ingredients. Stir in the
vinegar. Add potatoes and toss to mix.
