Chicken-Artichoke and Rice Salad

Makes 3 to 4 servingsSalad

Prep Time: 10 min.

Ingredients:

  • 1 - package (4.7 oz) chicken-flavored rice vermicelli mix, cooked

  • 2 cups cooked chicken, diced

  • 2 jars (2-1/4 oz.) marinated artichoke hearts, drained and 1 jar liquid reserved

  • 1 - green bell pepper, chopped

  • 1 - bunch green onions, chopped

  • 1 - can (8 oz.) water chestnuts, drained and chopped

  • 2/3 - cup mayonnaise

  • 1/2 - teaspoon curry powder

  • 1/8 - teaspoon salt

  • 1/8 - teaspoon pepper

Directions:

  1. In a serving bowl, combine rice vermicelli and chicken. Set aside.

  2. Chop artichokes and add to mixture along with reserved liquid.

  3. Blend in bell pepper, green onion, water chestnuts, mayonnaise, curry powder, salt, and pepper.
