Artichoke & Turkey Country Salad

Ingredients

  • 2 - jars (6-ounce) marinated artichoke hearts, drained, reserve marinade
  • 2 - Tablespoons balsamic vinegar
  • 1/4 - teaspoon coarsely ground pepper
  • 4 - cups mixed greens
  • 1 - package (8-ounce) (2 cups) fresh mushrooms, halved
  • 8 - ounces unsliced deli turkey, cubed
  • 4 - ounces (1 cup) Mozzarella or Colby Cheese, cubed 1/2-inch
  • 2 - medium tomatoes, cut into wedges
  • 2 - Tablespoons freshly grated Parmesan cheese

Directions

  1. In a small bowl, you stir together reserved marinade, vinegar and pepper.
  2. In large bowl, you toss together the mixed greens, mushrooms, deli turkey, Mozzarella or Colby Cheese, tomatoes, and Parmesan cheese. You add half of marinade mixture and toss to coat.
  3. You want to serve with remaining marinade mixture.
