Orange Glazed Grilled Sausage with Artichoke Salad

Ingredients

  • 1/2 - cup orange juice concentrate thawed
  • 1/2 - cup honey
  • 1/4 - cup soy sauce
  • 1/2 - Tablespoon rice wine vinegar
  • salt (to taste)
  • pepper (to taste)
  • 2 - packages gourmet sausage

Salad

  • 2 - Baby Artichokes fresh
  • 1 - cup Whole Pecans toasted
  • 1 - Orange cut in half
  • 1/4 - cup Red Onion sliced paper thin
  • 2 - Tablespoon Green Onion chopped
  • 1/2 - cup Green Olives whole
  • 1/2 - cup Small, Black Olives whole
  • 2 - Tablespoon Lemon Zest
  • 3 - Tablespoon Olive Oil
  • 2 - Tablespoon Italian Parsley Leaves

Directions

Preheat grill to medium-hot fire according to manufacturer’s directions.

  1. In a bowl, mix orange juice concentrate, honey, soy sauce and rice wine vinegar. 
  2. Season with salt and pepper.
  3. Grill the sausage basting with the orange sauce, coating all sides until char marks appear. 
  4. Set aside and keep warm.

Salad

  1. Break off the outer leaves of the artichokes and discard. 
  2. Rub the artichokes with a slice of lemon to prevent discoloration. 
  3. Slice the artichoke hearts paper-thin.
  4. Juice one half of the orange and place in a large mixing bowl. 
  5. Cut off the peel and pith of the remaining orange half and cut into thin slices. 
  6. Place in bowl with remaining ingredients. 
  7. Toss to combine. 
  8. Place salad mixture and sausage on serving dish.
