Fettuccini

Makes 4 servingsRecipes for Your Next Picnic from AlansKitchen.com

Ingredients:

  •    1  pound fettuccini

  •    3  slices bacon, diced

  •    2  slices prosciutto, chopped

  •    4  Tablespoons butter

  •    2  eggs

  • 1/2  cup Parmesan cheese

  • 1/2  cup Romano cheese

Directions:

  1. In a large pot, add water and salt and bring to a boil.   When it comes to a boil, drop in the fettuccini.  You want to stir gently.  Cook until the entire fettuccini rise to the top of the pot, about 4 minutes after returning to a boil.  Drain and keep hot.

  2. In a frying pan, cook diced bacon until brown.  Stir in the prosciutto and add butter.  Beat eggs with two tablespoons cheese.

  3. To the fettuccini add the bacon and ham, add the eggs, and toss all together gently.  Serve immediately with remaining cheese sprinkled on top.

Picnicking & Tailgating

You want to prepare the bacon-prosciutto, a day or two earlier.  Heat in a microwave just before leaving and store in heated thermal container. 

Cook the fettuccini just before leaving and store in another heated thermal container.  Place the Parmesan and Romano cheese in a separate container and place in the ice chest to keep cool.  

When at the picnic site, put the fettuccini and bacon-prosciutto mixture together and top with the cheese.
