Egg Salad Cucumber Pitas
Makes 4 sandwiches

- 1/4 - cup stone-ground
- 8 -
hard-cooked, peeled, coarsely chopped
- 2 - Tablespoons chopped fresh
- 2 - Tablespoons
- 1/4 - teaspoon
- 4 - whole wheat or white pita
pocket breads, cut in half
- 2 - medium
cucumbers, thinly sliced
- 1 - medium red
- 1/2 - cup alfalfa sprouts, if
a medium bowl, stir together mustard, eggs, chives,
sour cream and salt.
assemble sandwiches, fill each pita bread half with
1/3 cup egg mixture.
