Creamed Spinach with Bacon

Makes 4 servings

Prep Time: 10 min
Cooking Time 20 min


  • 1      quart salted water
  • 1      pound fresh spinach, well washed and chipped
  • 1/2   teaspoon salt
  • 3      slices bacon
  • 2      Tablespoons chopped onion
  • 1      Tablespoon flour
  • 1/2   teaspoon pepper
  • 1/2   cup sour cream


  1. In a quart of salted water, simmer the spinach for 10 to 12 minutes. Drain.
  2. In a skillet, saute the bacon until crisp. Drain, crumble, and set aside.
  3. In the bacon fat, saute the onion, stir in the flour and pepper and then the spinach.
  4. Heat thoroughly, stirring well.
  5. Add the sour cream and heat a few minutes longer, but do not boil.
  6. Serve topped with the crumbled bacon.
