Black-Walnut Bisque

Makes 4 servings

Prep Time: 15 min
Cooking Time: 10 min


  • 3      Tablespoons butter
  • 3      Tablespoon flour
  • 4      cups beef stock
  • 1/2   teaspoon dried marjoram
  • 1/2   bay leaf
  • 1      teaspoon salt
  •         Dash cayenne
  • 1      cup crushed black-walnut meats
  • 1/2   cup sour cream
  • 1/2   cup heavy cream


  1. In a large saucepan melt the butter. Stir in the flour until smooth, then gradually stir in the beef stock.
  2. Add marjoram, bay leaf, salt, and cayenne.
  3. In a small bowl, mix the walnuts and sour cream. Stir into the stock.
  4. Cook for 5 minutes.
  5. Remove from heat and stir in heavy cream. Serve hot.
