1) In a skillet at moderate heat, fry
bacon until crispy and drain bacon on paper towel.
2) Leave 5
tablespoons of drippings and remove the remaining.
3) Sauté onions in
skillet and lightly brown.
4) In a bowl, add the eggs, mix with
mashed potatoes, milk, salt, pepper and sautéed onions.
5) Shape the
mashed potato mixture into cakes about 3/4-inch thick.
6) Lightly brown
the potato cakes in skillet.
7) Turn the potato cakes once to brown
8) Cover and steam over low heat for 5 minutes.
9) Serve with
