Makes 4 servings
- 6 - large potatoes, boiled and mashed
12 - strips bacon
3 - large onions, chopped
1/2 - teaspoon salt
1/4 - teaspoon pepper
- In a skillet at moderate heat,
- Drain bacon on paper towel and crumble.
- Add the onions
to the pan with the drippings and saut� until brown.
- In a bowl, combine the onions,
mashed potatoes, bacon, salt and pepper.
- Return to the skillet and
- Turn over like an omelet and brown the other side.
Cover and steam for 5 minutes and serve.
