Pennsylvania German Potato Salad
Pennsylvania Dutch Recipes from AlansKitchen.comMakes 4 servings


  • 6 - large potatoes, boiled and mashed
  • 12 - strips bacon
  • 3 - large onions, chopped
  • 1/2 - teaspoon salt
  • 1/4 - teaspoon pepper


  1. In a skillet at moderate heat, brown bacon. 
  2. Drain bacon on paper towel and crumble. 
  3. Add the onions to the pan with the drippings and saut� until brown.
  4. In a bowl, combine the onions, mashed potatoes, bacon, salt and pepper. 
  5. Return to the skillet and quickly brown. 
  6. Turn over like an omelet and brown the other side. 
  7. Cover and steam for 5 minutes and serve.
