String Beans
Pennsylvania Dutch Recipes from AlansKitchen.comMakes 6 servings

Ingredients

  • 1 - quart string beans
  • 1 - teaspoon salt
  • 1 - stalk fresh mint, chopped
  • 1 - Tablespoon butter
  • 1/8 - teaspoon pepper

Directions

  1. Cut the beans lengthwise and fine (French bean-style). 
  2. Add 1 quart of water to pot and bring to a boil. 
  3. Plunge beans into boiling water and quickly cook 7 minutes. 
  4. Drain the water. 
  5. Add fresh boiling water and salt, and mint. 
  6. Cook 5 minutes longer or until beans are tender. 
  7. Drain, add butter, pepper, and shake over heat until piping hot.
