Currant Jelly
Pennsylvania Dutch Cooking from AlansKitchen.comMakes 5 (6-ounce) glasses


  • 3 - cups currant juice
  • 3 - cups sugar


  1. Wash currants and put into a kettle with little water.
  2. Simmer over low heat until color has left currants and they are pulpy.
  3. Remove from stove and strain the juice.
  4. Combine the juice and sugar and simmer slowly over low heat until the mixture threads from a spoon.
  5. Bring quickly to a boil, remove from heat at once, and pour into hot, sterilized jelly glasses.
  6. Cool and seal.
