Grape Preserve

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 8 (6-ounce) glasses


  •    4  pounds Concord grapes

  •    1  pint water, boiling

  •    1  cup walnut meat

  •    2  oranges, juice and grated rind

  •    5  cups sugar

  • 1/4  teaspoon salt

  •    1  cup seedless raisins, chopped


  1. Wash and drain grapes. Remove skin from pulp and reserve the skin. 

  2. In a saucepan at moderate heat, place the pulp. 

  3. Cook 10 minutes or until you can clearly see the seeds.  Run through a sieve. 

  4. Allow the pulp to cool.  Reserve the

  5. Pour boiling water over the walnut meat, drain, and finely chop.

  6. Into the grape pulp, add the orange juice, grated rind, sugar, salt, and raisins.

  7. At low heat, you want to stir until the sugar dissolves. 

  8. Increase heat to moderate and boil until mixture thickens, constantly stirring.

  9. Add grape skins and bill 5 minutes longer or until mixture is very thick.

  10. Add walnut meat.  Pour into hot jelly glasses, cool, and seal with paraffin.
