Brown Flour Potato Soup

  1. In a stockpot, pour in water and salt. 

  2. Add the potatoes and cook 30 minutes at a moderate heat or until tender. 

  3. Reduce heat to low and slowly add in the milk. 

  4. Simmer for 5 minutes.

  5. In a small saucepan, melt butter add flour and brown. 

  6. Carefully blend in the browned flour into the potato soup. 

  7. Increase heat to moderate and bring soup to a boil. 

  8. Add the salt and pepper and serve. 

  9. Garnish with hard-boiled eggs.
