Chicken Croquettes

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 4 servings

Prep Time: 20 min
Cooking Time: 30 min


  • 2     cups cooked chicken ground or chopped fine
  • 1/8  teaspoon celery salt
  •    1  teaspoon lemon juice
  • 1/8  teaspoon paprika
  •    1  Tablespoon parsley
  • 1/4  teaspoon chopped onion
  •    1  cup white sauce (see recipe below)
  •    1  egg, beaten
  •        Bread crumbs
  •        Oil for deep fryer


  1. In a bowl, combine chicken, celery salt, lemon juice, paprika, parsley, onion, and white sauce.
  2. Shape into croquettes and roll in bread crumbs.
  3. Then roll croquettes in beaten egg and again in bread crumbs
  4. Fry in deep fat for 4-minutes.

White Sauce


  •    1  Tablespoon butter or margarine
  •    1  Tablespoon flour
  • 1/2  teaspoon salt
  • 1/8  teaspoon pepper
  •    1  cup milk


  1. In a saucepan, melt butter.
  2. Then add flour, salt, and pepper and mix well.
  3. Gradually add milk, stirring constantly until thickened.
