Strawberry Tart

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 1 (deep 7-inch) tart

Prep Time: 15 min
Baking Time: 40 min


  • 1/2   recipe Rich Pastry
  • 1      Tablespoon instant tapioca
  • 2      cups strawberries
  • 1/2   cup sugar
  • 2      egg whites
  •         Pinch of salt
  • 1      Tablespoon sugar


Preheat oven to 400� F.

  • Use half the recipe for Rich Pastry
  • Line a deep pie dish with crust and sprinkle tapioca across bottom. 
  • Add strawberries mixed with sugar. 
  • Bake oven for 40 minutes. Cool a little.
    Beat egg whites stiffly with salt, mix in sugar, spread lightly over top of tart. 
  • Return to oven long enough for meringue to brown lightly. 
  • Use same method to make Raspberry Tart.
