Rosina Boi (Raisin Pie)

Pennsylvania Dutch Cooking from AlansKitchen.com Makes 2 (8-inch pies)


  • 1 - cup seeded raisins
  • 2 - cups water
  • Rich Pastry (see recipe)
  • 1 - egg, beaten
  • 1-1/2 - cups sugar
  • 4 - tablespoons flour
  • Pinch of salt
  • 1 - lemon, juice and grated rind


Preheat oven to 375-degrees F.

  1. Soak raisins in water until soft and plump.  Make pie crust, using recipe for Rich Pastry.  Chill. Mix egg and sugar, add sifted flour, salt, raisins, lemon juice, and water.  Place in top of double boiler, over boiling water, and cook gently for 15 minutes.  Add grated lemon rind and stir.  Cool. 

  2. Line pie tins with pastry and fill shells with the mixture.  Crisscross strips of pastry for the tops. 

  3. Bake for about 40 minutes.  This is the traditional "Funeral Pie."
