1 - heaping tablespoon butter
1/2 - cup flour
1 - cup sugar
3 - cups rhubarb
Pinch of salt
Preheat oven to 450° F.
Line a pie dish with pastry
and dot with butter.
Rich Pastry into 2 crusts.
Mix flour and sugar and sprinkle some of it
over crust. Skin the rhubarb, cut in 1/2-inch pieces, and measure 3 cups.
rhubarb with remaining flour and sugar and pour into pie shell.
Put vents in top crust and seal on the pie, crimping edges. Bake
for 10 minutes and in 350° oven 25 to 30 minutes longer, when crust
should be golden brown.
