Grape Pie

Pennsylvania Dutch Cooking from Makes 1 8-inch pie.


  • 4 - cups Concord Grapes
  • 1 - cup sugar
  • 1 - teaspoon butter
  • Rich Pastry
  • 2 - Tablespoons flour
  • Pinch of salt


Preheat oven to 350� F.

  1. Skin and mash the grapes to loosen seeds. 
  2. Simmer in water to cover for 30 minutes, stirring. 
  3. Remove seeds from pulp. 
  4. At the same time cook the grape skins in a little water until tender. 
  5. Combine pulp and skins, add sugar and butter and cook together for a few minutes.
  6. Line a pie dish with Rich Pastry, dredge with half the flour and a little sugar.
  7. Dot with butter. 
  8. Add grape mixture, dredge again with flour and sugar, and sprinkle with salt. 
  9. Dot with butter. 
  10. Roll out top crust, gash air holes in center, place on pie, seal and crimp. 
  11. Bake for 30 to 40 minutes.
