Rhubarb-Strawberry Pie

Prep Time: 15 min
Baking Time: 50 min


  1. 1     pint fresh strawberries
  2. 2     cups raw rhubarb
  3. 3/4  cup brown sugar
  4. 1/2  cup sugar
  5. 1     teaspoon grated lemon rind
  6. 1     double crust unbaked (9-inch) pie shell


  1. Slice strawberries. Place in a bowl with rhubarb.
  2. In a small bowl, combine brown sugar, sugar, and lemon rind.
  3. Pour over Rhubarb and strawberries and lightly toss.
  4. Pour into pie shell.
  5. Cover with top crust and seal edges.
  6. Place in oven and bake for 50 minutes or until golden brown.
