Rhubarb Pie (2)

Prep Time: 20 min
Baking Time: 10 min + 30 min


  • 3        cups diced rhubarb
  • 1        unbaked (9-inch) pie shell
  • 1-1/4  cup sugar
  • 1/4     teaspoon salt
  • 2        Tablespoons water
  • 3        Tablespoons flour
  • 1        Tablespoon lemon juice
  • 2        eggs
  • Crumbs
    • 3  Tablespoons flour
    • 3  Tablespoons sugar
    • 2  Tablespoons butter


Preheat oven to 425� F.

  1. Place rhubarb in unbaked pie shell.
  2. In a bowl, combine sugar, salt, water, flour, lemon juice, and eggs.
  3. Stir to form a smooth paste and spread over rhubard.
  4. To make crumbs, in a mixing bowl, mix flour, sugar, and butter.
  5. Cover with crumbs and bake for 10 minutes.

Reduce oven to 325 F.

  1. Bake pie for 30 minutes.
