Chocolate Speise (Chocolate Pudding)
Makes 4 servings.
From an old cook book
The literal translation would be food, in the
sense of angel food or devil's food, but in this case it is a
1/4 - cup grated chocolate
2 - Tablespoon flour
1/2 - cup milk
2 - rounded Tablespoon butter
2 - Tablespoon sugar
3 - eggs
Mix chocolate and flour with a
little of the milk. Add balance gradually, blending.
saucepan over low heat.
Add butter and stir to a smooth paste
until mixture leaves side of the pan.
Add sugar, beat in; cool.
Add egg yolks one at a time, then vanilla.
Fold in stiffly
beaten egg whites.
Pour into a buttered pudding dish and steam
over boiling water for about an hour.
Chill and unmold.
