Cheese Pudding
Makes 4 servings

12 - ounces cottage cheese
3/4 - cup cream
1 - Tablespoon sugar
1 - lemon, juice and grated rind

  • Press cheese through a sieve and mix with cream, sugar, and lemon juice.
  • Fold in most of the grated rind, sprinkle the rest on top with a little cinnamon.
  • Mold, chill, and serve-with a spoonful of strawberry or cherry preserves on top of each serving.
