Pig's Stomach with
- 1 - pig's stomach
- 2 - Tablespoons butter, melted
- 2 - potatoes, diced
- 1 - onion, chopped
- 1 - pound smoked sausage
- 1/2 - teaspoon salt
- 1/4 - teaspoon pepper
Preheat oven to 375° F.
Clean the stomach thoroughly,
removing membranes. Mix potatoes, onion, sausage,
salt, and pepper to make dressing.
Stuff the stomach as tightly as
you can and sew up. Cover and bake for 3
Remove cover and brown for the
last 10 minutes. Melt butter in hot, small pan
until it smokes and darkens.
Pour over the pig's stomach
just as you serve it and slice.
