Poor Man's Turkey
Pennsylvania Dutch Cooking from AlansKitchen.comMakes 6 servings.


  • 1 - beef flank steak (4 pounds), with pocket

  • 2 - cups potatoes, diced

  • 1 - onion, chopped

  • 2 - teaspoons parsley, chopped

  • 3 - eggs, beaten

  • 1/2 - teaspoon salt

  • 1/4 - teaspoon pepper


Preheat oven to 325� F.

  1. Have the butcher cut a pocket in the beef flank. 

  2. In a bowl, mix the potatoes, onions, and parsley, eggs, salt, and pepper. 

  3. Stuff the pockets with potato mixture.

  4. Place beef flank in roasting pan and bake 1 hour and 45 minutes. 

  5. You want to baste the meat frequently, just as though it were turkey.
