Tortellen (Tartlets)

  •    1/2  lemon, grated rind

  •       1  cup sugar

  •       1  cup butter

  •       2  egg yolks

  • 1-1/2  cups bread flour

  •       1  egg white

  •       1  Tablespoon water

  •       1  cup shredded almonds

  •    1/2  cup sugar

  •       2  Tablespoon cinnamon

  •    1/4  teaspoon salt


Preheat oven to 350�F. Grease cookie sheet.

  1. Grate lemon rind and mix with sugar. 

  2. Cream with butter and beat in egg yolks one at a time. 

  3. Add flour gradually, sifting into batter to make rich dough. 

  4. Form into balls the size of walnuts and flatten with the bottom of a glass. 

  5. Beat egg white with water and brush over cookies. 

  6. Blanch and shred the almonds, mix with sugar, cinnamon, and salt and sprinkle thickly over tops of cookies.

  7. Bake for about 15 minutes or until golden brown.
