Sand Tarts

Pennsylvania Dutch Cooking from AlansKitchen.comMakes about 100 cookies.


  • Blanched almonds

  • 1 - cup soft butter

  • 2 - cups sugar

  • 3 eggs

  • 4 - cups sifted flour

  • 1 - teaspoon vanilla

  • Sugar and cinnamon, mixed


Preheat oven to 350� F. Grease cookie sheets.

  1. Blanch and split almonds (because a whole almond presents no flat side to stick to a cookie). 

  2. Cream butter and sugar, stir in eggs, blend well. 

  3. Sift in flour to make a stiff batter, adding vanilla. 

  4. Roll out on board sprinkled with powdered sugar, very thin.

  5. Cut in shapes-usually rounds, sometimes hearts, stars, and half moons. 

  6. Brush tops with a little egg white, then shake a very little cinnamon and sugar on top. 

  7. Press down half an almond at center of each cookie.

  8. Bake for 8 to 10 minutes, watching to prevent burning. 

  9. Cookies are done when they just begin to change color. 

  10. Should not be allowed to brown. 

  11. Better when chilled overnight before rolling and cutting.
