Moravian Brown Cookies
Pennsylvania Dutch Cooking from AlansKitchen.comMakes 6-8 dozen cookies



Preheat oven to 325� F. Grease cookie sheet.

  1. Cream sugar and shortening. 
  2. Sift together salt, spices, and 1 cup of flour. 
  3. Sift into mixing bowl, work sugar and shortening into flour, add egg well beaten and slightly warmed molasses. 
  4. Add hot water and soda, stirring into mixture. 
  5. Stir in 4 cups sifted flour, a little at a time.
  6. Chill in refrigerator overnight. 
    Next morning roll out, very thin, on floured board. 
    Shape with Christmas cookie cutters: like men, deer, men on horseback, etc.
  7. Bake for about 15 minutes. 
  8. Pierce with a darning needle when they come from the oven, so that they may be threaded to hang on Christmas tree. 
  9. Cookies may be iced with colored frosting and decorated with pieces of fruit and nuts.
