"Dutch" Shortbread Cookies

  •    1  lemon, grated rind
  • 2/3  cup sugar
  •    1  cup butter
  •    1  egg
  •        Pinch of salt
  •    6  hard-boiled egg yolks
  •    3  cups flour, sifted
  •    1  egg white
  •        Milk
  • 1/2  cup sugar
  •    2  Tablespoons cinnamon
  • 1/3  cup chopped nuts


Preheat oven to 325� F. and grease cookie sheet.

  1. Grate the lemon rind and mix with sugar.
  2. Cream butter and add.
  3. Beat in egg and mix together.
  4. Add salt.
  5. Put hard-boiled egg yolks through a sieve and add.
  6. Stir in sifted flour.
  7. Roll balls from dough, the size of walnuts (using about 1 teaspoon of dough for each will keep them uniform in size). 
  8. Place on cookie sheet and flatten with a fork. 
  9. Mix slightly beaten egg white with a little milk, dip balls in this, then in mixed sugar, cinnamon, and nuts.
  10. Return to cookie sheet and bake for 15 minutes or until lightly browned.
