When it comes right down to it, the
“typical” Pennsylvania Dutch cake is some kind of a coffee
cake-probably crumb-topped, often encased in pie crust, sometimes
rich with molasses, sometimes with cheese, sometimes adorned with
apple quarters, sometimes with raisins or nuts. You know all that if
you have been coming along with me.
But all that, of course, is Kuchen
and Kuchen can cover a lot of ground in baking. Pretty much
everything that goes in the oven, is dropped in fat, or is fried on
a griddle (if it's sweet), started out as Kuchen in
Pennsylvania. So-Kuchen is cakes in Pennsylvania, and of all
kinds. In this section are set forth the cakes made and liked by the
Pennsylvania Dutch, that is, cake in the usual sense of the word.
You cannot stand up and say they are indigenous but you cannot say
they are not, because they have been baked in Pennsylvania Dutch
ovens for generations. At any rate, these are Pennsylvania's
favorite cakes. And they're all from old, tried and true recipes.
