Makes 24 pancakes
- 2 - cups all-purpose
- 1/2 - teaspoon salt
- 2 - cups milk
- 4 - eggs (separate whites
- 1 - pint huckleberries
- 2 - Tablespoons sugar
In a mixing bowl, sift the flour and salt.
Gradually add the milk.
Beat the egg yolks and add to the flour mixture.
Whip the egg whites and fold in.
Dredge the berries in flour and add to the mixture. Pour batter on greased hot
griddle and cook until golden brown.
Sprinkle with sugar and serve
