Feather Muffins

Pennsylvania Dutch Cooking from AlansKitchen.comMakes 12 muffins


  • 1/4 - cup sugar
  • 1/4 - cup butter, softened
  • 1 - egg, beaten
  • 2 - cups all-purpose flour, sifted
  • 3 - teaspoons baking powder
  • 1/2 - teaspoon salt
  • 3/4 - cup milk


Preheat oven to 400� F. and grease muffin pans.

  1. In a mixing bowl, whip the sugar and butter together into a creamy consistency. 
  2. Add in the egg and stir. 
  3. Sift in the flour (you may want to sift flour several times) with the baking powder and salt. 
  4. Alternate with the milk and quickly mix. 
  5. Pour batter into muffin pans and bake in oven 20 minutes.
