Surfing Pineapple Gazpacho

Ingredients:

  1. 3 - cups Fresh Pineapple Chunks, cut into smaller chunks, divided
  2. 2 - medium cucumbers, peeled, seeded and chopped, divided
  3. 1 - cup chopped yellow bell pepper, divided
  4. 1/2 - cup chopped onion
  5. 1 - cup Pineapple Juice
  6. 1 - Tablespoon white vinegar
  7. 1 - teaspoon chopped jalapeno
  8. 2 - Tablespoon sugar

Directions:

  1. Combine one-half of pineapple chunks, cucumbers, bell pepper and onion, in medium bowl; set aside.
  2. Mix remaining pineapple chunks, cucumbers, bell pepper, onion, pineapple juice, vinegar and jalapeno in blender or food processor container. 
  3. Cover and blend until smooth. Stir into reserved pineapple mixture.
  4. Stir in sugar. Cover and refrigerate 2 hours or until chilled. 
  5. Garnish with jalapeno slices, if desired.
