Cold Avocado Soup
Makes
4 to 6 servings
Ingredients:
- 2 - ripe avocados, peeled,
seeded, and mashed
- 2 - cups chicken broth
- 1 - teaspoon salt
- 1 - teaspoon dried tarragon
- Few dashed Tabasco sauce
- 1 - Tablespoon lemon juice
- 1 - cup heavy cream (or sour
cream) chopped chives
Directions:
- Put the avocados and chicken
broth into a blender, and blend at low speed until smooth, or
mash and whip together.
- Ad the salt, tarragon, Tabasco,
and lemon juice. Bland again.
- Add the bream, and blend briefly
again.
- Chill and serve in chilled cups,
garnished with chives.
