New England Corned Beef Dinner

Makes 8 to 10 servingsNew England Home Cooking

Total Time: 4 hrs. and 5 min.


  • 5  pounds corned beef

  • 6  onions

  • 5  turnips, peeled

  • 7  potatoes, peeled

  • 6  carrots, peeled

  • 1  head cabbage, quartered

  • 8  cooked beets

  • 1  quart cold water

  •    mustard

  •    horseradish


  1. Wash the corned beef.  In a large pot, add cold water and corned beef.  Bring to a slow boil and simmer for 2-1/2 to 3 hours.  You want to cook the vegetables in a progressive order. 

  2. After the 2-1/2 to 3 hours, you first add the onions and turnips.  Thirty minutes later, add the carrots and potatoes.  Continue cooking another 15 minutes and add the cabbage.  Continue cooking 10 minutes and add the beets.  

  3. Keep it going for another 10 minutes and the dinner is finished cooking.  Serve on a platter.  You can use the mustard or horseradish as a condiment. 

Picnicking & Tailgating:

This can be an ideal picnic or tailgate meal.  Heat (on stove or in microwave) before leaving and pour into a thermal container.
