This is one of my favorite Mexican dishes and I think you'll enjoy.  You want to combine: limes, ribeye steaks, garlic, ground red chilies, freshly ground black pepper, ground cumin, olive oil, and cilantro.

Salsa Fresca
What good Southwestern recipes does not have a Salsa recipe.  In a large glass bowl combine: tomatoes,  garlic, red or white onion, fresh lime juice, roasted jalapenos, cilantro, and salt.

Pan Fried Potatoes with Red Chile
Start with Red Potatoes.  Then add: onion, garlic, butter, New Mexico red chiles, salt, and pepper.

Green Chile Cheddar Cornbread
Put these ingredients together: buttermilk, New Mexico green chiles, onion, yellow cornmeal, all-purpose flour, sugar, baking soda, baking powder, salt, garlic powder, eggs, and mild cheddar cheese.
