Tex-Mex Beef Chili Mac

Total Time: 30 min.

Ingredients:

  • 1 - lb. ground beef
  • 1/2 - cup chopped green bell pepper
  • 1/4 - cup chopped onion
  • 1 - clove garlic, minced
  • 1 - can (14-1/2 oz.) Mexican-style diced tomatoes, undrained
  • 1 - can (8 oz.) tomato sauce
  • 3/4 - cup uncooked elbow macaroni
  • 3/4 - cup water
  • 1 - packet Taco Seasoning Mix
  • 1/2 - teaspoon salt
  • grated Colby Jack cheese, optional

Directions:

  1. In a 3-quart saucepan, brown ground beef with bell pepper, onion and garlic over medium heat for 8 to 10 minutes, or until beef is not pink, breaking beef into crumbles.  Pour off drippings.

  2. Stir in tomatoes, tomato sauce, macaroni, water, seasoning mix, and salt; bring to a boil.  Reduce heat.  Cover tightly and simmer 15 minutes.

  3. Remove from heat and let stand 5 minutes.  Top with grated cheese if desired.
