Tex-Mex Beef Chili Mac
Makes: 4 Servings
Total Time: 30 min.
- 1 - lb. ground beef
- 1/2 - cup chopped green
- 1/4 - cup chopped
- 1 - clove
- 1 - can (14-1/2 oz.) Mexican-style diced
- 1 - can (8 oz.) tomato sauce
- 3/4 - cup uncooked elbow
- 3/4 - cup water
- 1 - packet Taco Seasoning Mix
- 1/2 - teaspoon
Colby Jack cheese, optional
In a 3-quart
saucepan, brown ground beef with bell pepper, onion and garlic
over medium heat for 8 to 10 minutes, or until beef is not pink,
breaking beef into crumbles. Pour off drippings.
Stir in tomatoes,
tomato sauce, macaroni, water, seasoning mix, and salt; bring to a
boil. Reduce heat. Cover tightly and simmer 15
Remove from heat
and let stand 5 minutes. Top with grated cheese if desired.
