Norma's Meat Loaf

This is a recipe Debi's mother handed down to her.  No matter how hard I work at it, Debi just makes better meat loaf than I do.  Maybe it is because its her mother's guiding her.

Makes 6 servings: $1.56 per serving*

Main Dish Recipes from AlansKitchen.comIngredients:

Preheat oven to 350-degrees F.

  1. In a large mixing bowl, combine the beef and pork in a bowl.  Now punch a whole in the middle of the ground meat.

  2. Then add the onion, oats, breadcrumbs, celery, bell pepper, tomato sauce, break in the egg, salt and pepper.

  3. Now for the fun part, (make sure your hands are clean), dig in a hand mix all ingredients.  You want everything evenly mixed.

  4. Form the meat mixture into a loaf, and place in a greased loaf pan.  Place in preheated oven.

  5. After baking 45 minutes, you want to remove from oven and spread the ketchup over the top to form a crust.  Then return to oven and finish baking.

  6. Total baking time is 1 to 1-1/2 hours.  Let stand for 15 minutes and then remove from loaf pan.

Picnicking & Tailgating:

It depends if you want the meat loaf, hot or cold for your picnic.  If you desire it to be warm, wrap in aluminum foil, and place in a heated thermal container.  If you desire it to be cold, wrap in aluminum foil, and chill in refrigerator.  Place in a ice chest until you reach your picnic spot.
