Puerto Rican Chicken en Mole

Ingredients

  •    2  Tablespoons cooking oil

  •    3  slices stale bread, diced

  •    1  clove garlic, chopped

  •    1  onion, chopped

  •    3  green chili peppers, roasted and seeded

  • 1/8  teaspoon sesame seed

  • 1/8  teaspoon anise seed

  • 1/2 - teaspoon salt

  •    2  cloves

  • 1/4 - teaspoon pepper

  •    1  tomato, peeled and chopped

  •    1  cup chicken broth

  •    1  chicken, cooked

Directions

  1. Add cooking oil to frying pan; saute bread, onion, and garlic.  
  2. Add peppers, seasoning, tomato, and broth.  
  3. Simmer until blended.
  4. Cut cooked chicken into eight even pieces and add to simmering sauce.  
  5. Continue simmering 10 minutes.

Picnicking & Tailgating

Make a day or two ahead.  Heat (on stove or in microwave) before leaving.  Pour into a thermal container and serve when you reach your destination.
