Curried Turkey Breast
Makes 4 servings.

Ingredients

2 - tablespoons butter

2 - onions, sliced

8 - slices turkey breast (1/2-inch thick)

2 - teaspoons curry powder

1 - cup yogurt

1 - tablespoon tomato puree

1 - clove garlic, chopped

1/2 - teaspoon powdered ginger

1 - cup water

1 - teaspoon salt

1/8 - teaspoon cayenne pepper

Directions
  • In a frying pan at moderate heat, sauté onions in butter until golden. 
  • Push the onions aside and add the turkey. 
  • Sauté both sides until golden brown. 
  • Add the curry, yogurt, and tomato puree. 
  • Mix and cook for 10 minutes or until mixture starts to get dry.
  • Add the garlic, ginger, water, salt, and cayenne.  
  • Slowly cook until sauce is thick. 

Picnicking & Tailgating:

This dish can be made up a day or two ahead.  Just before leaving home, warm in microwave and keep in warm thermal containers.  Just open at the picnic or tailgate site and serve over rice.
