Curried Turkey with Jasmine Rice
Makes 4 servings.

Prep Time: 20 min.
Cooking Time: 10 min.

Ingredients

3 - Tablespoons olive oil
1 - large onion, thinly sliced
1 - clove garlic, minced
1/2 - cup celery, chopped
3 - Tablespoons all-purpose flour
1 - Tablespoon curry powder
1/2 - teaspoon ground turmeric
1/8 - teaspoon ground cloves
1-1/2 - cups chicken broth
3 - cups cooked turkey, chopped
1 - large tart (Granny Smith) apple, peeled, cored and chopped
1/2 - cup raisins, chopped
1 - teaspoon grated lemon peel
1 - Tablespoon lemon juice
Crushed red peppers (to taste)
3 - cans hot cooked jasmine rice
Shredded coconut (to taste)

Directions

  • In 3-quart sauté pan, add oil and heat. 

  • Next, add the onion, garlic and celery. 

  • Sauté until softened. 

  • Then add your flour, curry powder, turmeric and cloves and stir with wire whisk. 

  • Cook for 1 minute.

  • Gradually whisk in chicken broth and continue cooking until mixture thickens stirring constantly. 
  • Add turkey, apple, raisins, lemon rind and juice and red pepper flakes and season with salt. 
  • Stir well and cook for 5 to 7 minutes or until hot and bubbly. 
  • Serve over a bed of hot cooked jasmine rice and sprinkle with coconut.
