Pork Chops Santa Fe

4 - fresh boneless assorted loin chops
1 - teaspoon vegetable oil
1 - cup chunky salsa
1 - teaspoon oregano
1/2 - teaspoon ground cumin
1 - clove garlic, minced
- In large heavy skillet over medium-high
heat, you want to add the oil and heat.
- Quickly, brown chops for
about 2 minutes per side.
- Lower the heat to simmer.
- Next, add the
salsa, oregano, cumin and garlic.
- Cover and simmer 8 to 10 minutes
or until chops are done (internal temp 155°F).
Make a day or two ahead. Heat (on stove or in
microwave) before leaving. Pour into a thermal container and serve
when you reach your destination.
