Chicken Breasts with Tomato Basil Cream

Cooking Time: 12 min.

Ingredients:

  •    2  Tablespoons butter 
  •    2  teaspoons finely chopped fresh garlic
  • 1/4  teaspoon salt
  • 1/4  teaspoon coarse ground pepper
  •    4  (6-ounce) boneless skinless chicken breasts
  •    1  cup coarsely chopped red, yellow and/or orange tomatoes
  • 1/4  cup coarsely chopped fresh basil leaves
  • 1/2  cup whipping cream
  •         Fresh basil leaves, if desired

Directions:

  1. In a 10-inch skillet, melt butter until sizzling; stir in garlic, salt and pepper. Add chicken breasts.

  2. Cook over medium-high heat for8 to 12 minutes, turning once, until golden brown.

  3. Add tomatoes, 1/4 cup basil and whipping cream.

  4. Continue cooking for 4 to 5 minutes, stirring occasionally, until sauce is heated through.

  5. Serve with pasta and garnish with basil leaves, if desired.
