Chicken and Rice Amandine

Prep Time: 10 min.
Cooking Time: 20 min.

Ingredients:

  •       2  Tablespoons butter
  •    1/4  teaspoon garlic powder
  •    1/4  cup sliced almonds
  •     12  ounces boneless skinless chicken breast strips
  • 1 3/4  cups water
  •       1  package (6-ounce) rice with toasted pasta pilaf mix
  • 1 1/2  cups frozen French-cut green beans
  •    1/2  cup Sour Cream

Directions:

  1. In a 10-inch skillet, melt butter and garlic powder until sizzling. Next, add almonds.

  2. Cook over medium heat for 2 to 3 minutes, stirring occasionally, until almonds are lightly browned.

  3. Remove almonds with slotted spoon.  Set aside.

  4. Increase heat to medium-high and add chicken strips to same skillet.

  5. Cook for 5 to 7 minutes, stirring occasionally, until lightly browned.

  6. Stir in water and rice with seasoning packet. Continue cooking for 3 to 5 minutes until mixture comes to a boil.

  7. Reduce heat to medium. Cover and cook for 5 minutes.

  8. Uncover and stir in green beans.

  9. Cover and continue cooking for 5 minutes or until rice is tender and liquid is absorbed.

  10. Uncover and stir in sour cream.

  11. Sprinkle with almonds just before serving.
