Down Home Meatloaf

Prep Time: 15 minutes
Baking Time: 55 - 60 minutes

Ingredients

  • 1 - pound lean ground beef
  • 2 - large eggs
  • 1 - cup plain dry bread crumbs
  • 1 - can (14-1/2 ounces) diced tomatoes with sweet onions, drained
  • no-stick cooking spray
  • 2 - Tablespoons dark brown sugar, packed
  • 1 - can (8 ounces) tomato sauce

Directions

Preheat oven 400° F.

  1. In a mixing bowl, add beef, eggs, bread crumbs and diced tomatoes. Mix until well mixed and set aside.
  2. Line a lipped-baking sheet with foil. Coat with nonstick spray. Form meat mixture into loaf.
  3. Blend sugar into tomato sauce and set aside.
  4. Bake meatloaf for 30 minutes.
  5. Remove from oven, pour tomato mixture over top.
  6. Reduce temperature to 350° F. and bake for an additional 25-30 minutes, or until no longer pink in center.
  7. Let stand 10 minutes before serving.

Picnicking & Tailgating:

I have done this just before leaving for the picnic or tailgate party.  I have done it also ahead of time.  When I do it ahead of time, I warm it up in the microwave before packing it for the trip.  Then I place it in thermal container until I reach the picnic or tailgate site.
