Down Home Meatloaf

Baking Time: 55 - 60 minutes
Ingredients
- 1 - pound lean ground beef
- 2 - large eggs
- 1 - cup plain dry bread crumbs
- 1 - can (14-1/2 ounces) diced tomatoes with
sweet onions, drained
- no-stick cooking spray
- 2 - Tablespoons dark brown sugar, packed
- 1 - can (8 ounces) tomato sauce
Directions
Preheat oven 400° F.
- In a mixing bowl, add beef, eggs, bread
crumbs and diced tomatoes. Mix until well mixed and set aside.
- Line a lipped-baking sheet with foil. Coat
with nonstick spray. Form meat mixture into loaf.
- Blend sugar into tomato sauce and set
aside.
- Bake meatloaf for 30 minutes.
- Remove from oven, pour tomato mixture over
top.
- Reduce temperature to 350° F. and bake for
an additional 25-30 minutes, or until no longer pink in center.
- Let stand 10 minutes before serving.
I
have done this just before leaving for the picnic or tailgate
party. I have done
it also ahead of time. When
I do it ahead of time, I warm it up in the microwave before
packing it for the trip. Then
I place it in thermal container until I reach
the picnic or tailgate site.
