Aloha Citrus Chicken Salad Sandwich

Makes 4 servings

Prep Time: 15 min.

Ingredients:

  • 1-1/2  cups chopped cooked chicken breasts
  •    1/3  cup sliced Celery
  •    1/3  cup mayonnaise
  •    1/4  cup slivered almonds, toasted
  •       2  Tablespoons finely chopped Green Onion
  •    1/2  teaspoon garlic powder
  •       1  can (11 ounces) Mandarin Oranges, drained
  •       1  cup mixed salad greens
  •       8  slices multi-grain or whole wheat bread
  •       1  can (8 ounces) Pineapple Slices

Directions:

  1. In large bowl, add chicken, celery, mayonnaise, almonds, green onion and garlic powder. Mix.
  2. Gently stir in mandarin oranges.
  3. Line 4 bread slices with salad greens; evenly spoon chicken salad on top.
  4. Place pineapple slice over chicken mixture; top with remaining bread slices.
